A delicious and nutritious breakfast of champions!
Okay, so if you have any hang ups about texture in your food, this may be one that takes some adjusting for ya, as its gelatinous seedy texture is surely out of the ordinary. Though, I am told it is quite similar to tapioca pudding and though I thought it a little odd at first, but now I kind of love that it has a unique texture!
Plus, who knew those silly little chia pets’ seedlings were so dang good for you?! It’s definitely worth getting over any texture hangups for all the benefits you reap and delicious flavors you can create!
Chia seeds are crazy high in calcium, fiber, antioxidants, protein, selenium, potassium, magnesium, and much more! I eat mine for breakfast because of all the fiber and it’s like getting dessert for breakfast everyday!
This is probably my new favorite flavor! Hope you get adventurous and try it out!
The Innards:
- 1 1/2 cups Almond Milk (or any milk of choice)
- 1/3 cup Whole Chia Seeds
- 2 TBSP Maple Syrup
- 2/3 cup Blueberries mashed
- 1 tsp Vanilla Extract
Prep Time: 15 minutes
Serves: 4
How to Make it:
1. In a small mixing bowl mash your blueberries with a muddler or potato masher.
2. add in remaining ingredients and mix very well with a whisk.
3. Let sit for 5 minutes and stir well again. (It helps to stir before serving and you can store it in the fridge for about 5 days)
