A green and healthy twist on a classic, perfect for St. Patty’s!
So here is part 2 of the St. Patty’s inspired meal I made! What’s more Irish than meat and potatoes? I figured if I was going beef there would have to be some form of potato alongside it. Mashed seemed like a great traditional dish that would be easy to turn green. But trying to stick to the healthy side of things, I figured I’d make it green by adding broccoli and green onions! I think the green onions add great flavor! It’s a perfectly easy side dish for your St Patty’s meal, plus it’s a great way to get kids to eat broccoli who don’t like it!
It went perfect with the Whiskey Glazed Pistachio Roast and was easy to make while the roast was baking!
The Innards:
- 1 lb Potatoes, diced
- 4 cups Broccoli
- 1/4 cup nonfat milk
- 1/2 cup light Sour Cream
- 1/2 cup Green Onions, chopped
- S + P
- 2 TBSP butter
Prep Time: 5 minutes
Cook Time: 30 minutes
Calories per Serving (1/8 batch): 130, Fat: 4, Carbs: 19, Protein: 6
How To:
1. Boil your potato chunks until they are tender when speared with a fork.
2. In a separate pot steam your broccoli when the potatoes are about done.
3. Place the potatoes in a large mixing bowl and mash them with the butter, sour cream and milk.
4. When the potatoes are close to desired texture mash in the broccoli, then mix in the green onions.
