This surprising salad of raw brussels sprouts is crisp, refreshing, and stupid healthy!

I started drinking her “Glowing Green Smoothie” (which I have shared my favorite version of as the Spinach Smoothie) one year ago. It literally changed my skin from uneven, full of zits, and just blah to beautiful in one week!! No joke!! So why it took me this long to finally buy and read her book, I really don’t know. Her plan is scientifically backed and is a lifestyle not a diet, based on eating very fresh and clean, which I am now working towards. Anyway, if you are intrigued I seriously suggest reading her book or checking out her blog.
She provides some recipes in her books and I’ve basically been obsessed with brussels sprouts lately, so I thought I’d try out her Raw Brussels Sprouts Salad. I liked it, and raw sprouts are SO good for you, but wasn’t in love, so I decided to create my own raw sprouts salad and this is it!
I’m excited to start sharing a new level of healthy foods with you – though have no fear, they will be delicious!!
Innards:
- 1 lb Brussels Sprouts, peeled
- 1/2 Cucumber, thinly sliced as half moons
- 1 large Shallot, thinly sliced
- 1 TBSP Poppy Seeds
- 1/4 cup Raw Apple Cider Vinegar
- 1 TBSP Olive Oil
- S+P
Prep Time: 30 minutes
Serves: 4
How to Make it:
1. Trim the ends from each sprout so you can peel the leaves apart. (If anyone knows an easier way to do this please share! It can be very tedious!)
2. Place your sprout leaves, sliced cucumbers and shallots in a salad bowl.
3. Mix your vinegar, oil, poppy seeds, and salt and pepper then cover the salad with your dressing.
4. Cover and refrigerate a few hours before serving so it can marinate and the sprouts can soften a little.
Note: It will last in the fridge for a day or two and is great to pack for work because it’s okay that the dressing is already there! So I make a double batch ahead of time since peeling the sprouts is kind of a pain!
